  • 2 medium medium potatoes, diced
  • 4 eggs
  • 1 cup shredded cheddar cheese

Method
 

Cooking
  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and cook until golden and crispy, about 10-15 minutes.
  3. In a bowl, whisk together the eggs, adding salt and pepper to taste.
  4. Push the potatoes to one side of the skillet and pour the eggs into the other side.
  5. Scramble the eggs until cooked through, then mix them with the potatoes.
  6. Stir in the cheese and the optional ham or bacon, cooking until the cheese melts.
  7. Serve hot.

Notes

For extra flavor, consider adding chopped onions or bell peppers when cooking the potatoes. Make sure to dice the potatoes evenly so they cook at the same rate. Adjust the amount of cheese based on your preference—you can also try different types of cheese like mozzarella or pepper jack for a twist.
