  • 2 cups diced potatoes
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)

  • Chopped green onions for garnish (optional)

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook until golden and crispy, about 10-15 minutes.
  2. In a bowl, whisk together the eggs, salt, and pepper.
  3. Push the potatoes to one side of the skillet and pour the egg mixture into the other side. Scramble until fluffy and cooked through.
  4. Add the cheddar cheese and optional ham or bacon, mixing everything together until well combined and the cheese is melted.
  5. Serve warm, garnished with chopped green onions if desired.

Notes

Make sure to cut the potatoes into small, even pieces for even cooking. You can add other veggies like bell peppers or spinach for extra nutrition and flavor. Use a non-stick skillet for easier cooking and cleanup.
