  • Salt and pepper to taste
  • Chopped chives or green onions for garnish (optional)

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced potatoes and cook until crispy and golden, about 10-15 minutes.
  3. While the potatoes are cooking, beat the eggs in a bowl and season with salt and pepper.
  4. Push the potatoes to one side of the skillet and pour the beaten eggs into the other side.
  5. Scramble the eggs gently until cooked through.
  6. Combine the potatoes and eggs, then stir in the cheddar cheese and optional ham or bacon, cooking until the cheese is melted.
  7. Garnish with chives or green onions, if desired, and serve hot.

Notes

For extra flavor, add spices like paprika or garlic powder to the eggs while beating them. This recipe can easily be customized with vegetables like bell peppers, spinach, or mushrooms.
