Preparation
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, whisk together the cottage cheese, eggs, salt, and pepper until well combined.
  3. Stir in the shredded cheese and diced vegetables.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
Baking
  1. Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
  2. Allow to cool slightly before removing from the tin. Serve warm or store in the refrigerator for quick breakfasts later.

Notes
