Preparation
- Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or line with muffin liners.
- In a mixing bowl, combine cottage cheese, eggs, shredded cheese, and diced vegetables. Season with salt and pepper.
- Pour the mixture evenly into the muffin tin cups, filling each about 3/4 full.
Baking
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool for a few minutes before removing from the tin. Serve warm or store for meal prep.
Notes
To make it easier, use pre-diced vegetables or frozen vegetables that can be quickly thawed. You can substitute cottage cheese with ricotta for a creamier texture. Adding chopped cooked bacon or sausage can also give these bites an extra flavor boost.
