  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. In a mixing bowl, whisk together the eggs, cottage cheese, salt, pepper, and garlic powder until combined.
  4. Stir in the shredded cheese, chopped bell peppers, and spinach.
  5. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  7. Allow to cool slightly before removing from the muffin tin. Serve warm or store in the refrigerator for meal prep.

Notes

Store any leftover egg bites in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze them in a freezer-safe container for up to 2 months. You can add or replace veggies according to your preference for variations.
