Preparation
- Preheat your grill to medium-high heat.
- Season the chicken breasts with olive oil, salt, and pepper.
Cooking
- Grill the chicken for about 6-7 minutes on each side, or until cooked through.
- During the last few minutes of grilling, place slices of mozzarella on top of the chicken and close the grill lid until the cheese melts.
Serving
- Remove the chicken from the grill and layer with tomato slices and basil leaves.
- Drizzle with balsamic vinegar before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven, or enjoy cold.
