Main Ingredients
  • 4 pieces Chicken breasts Boneless, skinless preferred
  • 8 ounces Fresh mozzarella cheese, sliced Fresh mozzarella is best for melting
  • 2 pieces Tomatoes, sliced Roma or heirloom tomatoes recommended
  • 1 cup Fresh basil leaves Use whole leaves for freshness
Seasoning
  • 2 tablespoons Olive oil For grilling chicken
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 4 tablespoons Balsamic vinegar For drizzling before serving

Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with olive oil, salt, and pepper.
Cooking
  1. Grill the chicken for about 6-7 minutes on each side, or until cooked through.
  2. During the last few minutes of grilling, place slices of mozzarella on top of the chicken and close the grill lid until the cheese melts.
Serving
  1. Remove the chicken from the grill and layer with tomato slices and basil leaves.
  2. Drizzle with balsamic vinegar before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven, or enjoy cold.
