Preparation
- In a bowl, mix shredded chicken with buffalo sauce until well-coated.
- In another bowl, combine cooked rice or quinoa, shredded cheese, and ranch dressing.
- Lay out each tortilla and layer the buffalo chicken mixture, rice mixture, lettuce, tomatoes, and green onions.
- Roll the tortillas tightly, folding in the sides as you go.
- Place burritos seam-side down in a baking dish.
- Optional: sprinkle more cheese on top and bake at 350°F (175°C) for 10-15 minutes until heated through.
Notes
Serve with extra ranch dressing on the side. Can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. For extra heat, use a spicier buffalo sauce or add sliced jalapeños.
