  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce Adjust according to heat preference.
  • 1 cup cooked brown rice or quinoa
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup ranch dressing Substitute with blue cheese dressing for a twist.
  • 4 large flour tortillas Can also use corn or whole wheat tortillas.
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup green onions, chopped

Method
 

Preparation
  1. In a bowl, mix shredded chicken with buffalo sauce until well-coated.
  2. In another bowl, combine cooked rice or quinoa, shredded cheese, and ranch dressing.
  3. Lay out each tortilla and layer the buffalo chicken mixture, rice mixture, lettuce, tomatoes, and green onions.
  4. Roll the tortillas tightly, folding in the sides as you go.
  5. Place burritos seam-side down in a baking dish.
  6. Optional: sprinkle more cheese on top and bake at 350°F (175°C) for 10-15 minutes until heated through.

Notes

Serve with extra ranch dressing on the side. Can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. For extra heat, use a spicier buffalo sauce or add sliced jalapeños.
