Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the chopped broccoli, shredded cheddar cheese, garlic powder, salt, and pepper.
- Cut a pocket into each chicken breast and stuff with the broccoli mixture.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken for 3-4 minutes on each side until golden brown.
Cooking
- Transfer the chicken to a baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for a few minutes before serving.
Notes
Make sure not to overfill the chicken pockets to avoid spilling during cooking. You can add different spices or herbs to customize the flavor. For added moisture, consider adding a little cream cheese to the broccoli mixture.
