- In a bowl, whisk the eggs and season with salt and pepper.
- In a skillet, cook the diced vegetables until softened.
- Add the lean meat to the skillet and heat through.
- Pour the eggs into the skillet and scramble until cooked.
- Remove from heat and stir in the shredded cheese.
Assembly
- Lay out the tortillas and spoon the egg mixture onto each.
- Roll the tortillas tightly to form burritos.
- To freeze, wrap each burrito in foil or freezer paper and place in a freezer bag.
- To reheat, microwave or bake from frozen until heated through.
Notes
