  • 3 large eggs
  • 1 cup cooked lean meat (like chicken or turkey)
  • 1/2 cup shredded cheese Any type of cheese such as cheddar or Monterey Jack
  • 1/2 cup diced vegetables (like bell peppers and onions) Feel free to substitute other vegetables
  • 4 large tortillas Whole-wheat tortillas can be used for a healthier option
  • Salt and pepper to taste
  • Optional toppings (salsa, avocado, sour cream) Add according to preference

Method
 

Preparation
  1. In a bowl, whisk the eggs and season with salt and pepper.
  2. In a skillet, cook the diced vegetables until softened.
  3. Add the lean meat to the skillet and heat through.
  4. Pour the eggs into the skillet and scramble until cooked.
  5. Remove from heat and stir in the shredded cheese.
Assembly
  1. Lay out the tortillas and spoon the egg mixture onto each.
  2. Roll the tortillas tightly to form burritos.
  3. To freeze, wrap each burrito in foil or freezer paper and place in a freezer bag.
  4. To reheat, microwave or bake from frozen until heated through.

Notes

Serve breakfast burritos warm with your favorite toppings. They are great for breakfast, brunch, or a quick lunch. Leftover burritos can be stored in the freezer for up to 3 months.
