- In a skillet, scramble the eggs over medium heat until cooked through. Add salt and pepper to taste.
- Stir in the chopped sausage or bacon and diced vegetables, cooking until heated through.
- Lay out each tortilla and divide the egg mixture evenly among them.
- Sprinkle shredded cheese on top.
- Roll up the tortillas, folding in the sides as you go.
- Wrap in foil or plastic wrap and store in the freezer, if desired.
- To eat, reheat in the microwave or a skillet until warm. Serve with salsa, if desired.
Notes
If leftovers are present, store them in the refrigerator for up to 3-5 days or wrap tightly and freeze for up to 3 months.
