  • 4 large tortillas
  • 6 units eggs Can substitute with egg whites if desired.
  • 1 cup cooked sausage or bacon, chopped Feel free to use a plant-based option for vegetarian burritos.
  • 1 cup shredded cheese (cheddar or your choice) Experiment with different types of cheese.
  • 1 cup diced vegetables (bell peppers, onions, spinach) Use any combination of vegetables you like.
  • Salt and pepper, to taste
  • Salsa, for serving (optional) Add for extra flavor.

Method
 

Cooking
  1. In a skillet, scramble the eggs over medium heat until cooked through. Add salt and pepper to taste.
  2. Stir in the chopped sausage or bacon and diced vegetables, cooking until heated through.
  3. Lay out each tortilla and divide the egg mixture evenly among them.
  4. Sprinkle shredded cheese on top.
  5. Roll up the tortillas, folding in the sides as you go.
  6. Wrap in foil or plastic wrap and store in the freezer, if desired.
  7. To eat, reheat in the microwave or a skillet until warm. Serve with salsa, if desired.

Notes

If leftovers are present, store them in the refrigerator for up to 3-5 days or wrap tightly and freeze for up to 3 months.
