  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 cup blueberries Use fresh for best flavor; frozen can be used if thawed and drained.
  • 2 pieces eggs
  • 1/4 cup milk
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together cottage cheese, rolled oats, eggs, milk, honey (or maple syrup), vanilla extract, baking powder, cinnamon, and salt until well combined.
  3. Gently fold in the blueberries.
  4. Pour the mixture into a greased baking dish.
Baking
  1. Bake for 30-35 minutes or until golden brown and set.
  2. Let it cool slightly before serving.

Notes

Serve warm with yogurt, fresh fruit, or nuts. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
