Preparation
- In a bowl, mix together the cream cheese and honey until smooth.
- Spread the cream cheese mixture evenly on one side of each tortilla.
- Sprinkle the fresh blueberries over the cream cheese on one of the tortillas.
- Place the other tortilla on top, cream cheese side down, to form a sandwich.
Cooking
- Heat a skillet over medium heat and add a little cooking spray or butter.
- Carefully place the quesadilla in the skillet and cook for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let cool for a minute.
Serving
- Cut into wedges and dust with powdered sugar if desired.
- Serve warm with additional toppings if preferred.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. To reheat, warm in a skillet or microwave. Consider using whole wheat tortillas for a healthier option.
