  • 2 pounds ground beef or turkey
  • 1 onion chopped
  • 1 bell pepper chopped
  • 3 cloves garlic, minced
  • 2 cans (15 oz) kidney beans, drained and rinsed
  • 2 cans (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef or chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat.
  2. Add the chopped onion, bell pepper, and garlic to the pot and sauté until the vegetables are tender.
  3. Stir in the kidney beans, diced tomatoes, tomato paste, and broth.
  4. Season with chili powder, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for at least 30 minutes, stirring occasionally.
  6. Serve hot with optional toppings as desired.

Notes

For extra flavor, consider adding a teaspoon of smoked paprika or a dash of hot sauce for some heat. Customize the beans by using black beans or pinto beans. To make it vegetarian, replace the meat with additional beans or lentils. Leftovers can be stored in airtight containers in the refrigerator for up to three days or froze for future meals.
