For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 2 cloves garlic, minced
Main Ingredients
  • 1 pound chicken breast, diced
  • 1 cup cooked rice
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) feel free to use any vegetables you have on hand
  • Green onions for garnish

Method
 

Preparation
  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and minced garlic to create the Bang Bang sauce.
  2. Season the diced chicken with salt and pepper.
Cooking
  1. In a skillet over medium heat, cook the chicken until golden brown and fully cooked.
  2. Add mixed vegetables and sauté until tender.
  3. Toss the cooked chicken and vegetables with the Bang Bang sauce.
Serving
  1. Serve over cooked rice and garnish with sliced green onions.

Notes

You can marinate the chicken in the sauce for a few hours before cooking to enhance the flavor. Adjust the spiciness of the sauce by changing the amount of sriracha. For a lighter version, substitute the mayonnaise with Greek yogurt.
