Ingredients
  

For the Chicken and Bowl
  • 1 lb chicken breast, diced
  • 1 cup cooked rice Can use leftover rice
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots) Feel free to use whatever vegetables you have on hand
  • green onions to taste for garnish
For the Bang Bang Sauce
  • 1/4 cup mayonnaise Can substitute with Greek yogurt for a lighter sauce
  • 2 tablespoons sriracha Adjust based on spice preference
  • 1 tablespoon honey
  • 2 teaspoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Method
 

Make the Sauce
  1. In a bowl, combine mayonnaise, sriracha, honey, soy sauce, and sesame oil to make the sauce. Adjust the heat to your preference.
Cook the Chicken
  1. Cook the diced chicken in a pan over medium heat until cooked through. Season with salt and pepper.
Stir-Fry the Vegetables
  1. In the same pan, stir-fry the mixed vegetables until tender-crisp.
Assemble the Bowls
  1. In serving bowls, layer rice, chicken, and mixed vegetables. Drizzle with the Bang Bang sauce and garnish with green onions.

Notes

Serve the Bang Bang Chicken Bowl warm. Top with extra sauce on the side for those who like it spicier. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, adding a splash of water if necessary.
