  • 1 pound chicken breast, diced Cut into even pieces for quicker cooking.
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots) Customize based on preferences.
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce Add more for spiciness.
  • Salt and pepper to taste
  • Green onions for garnish

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
Cooking
  1. In a pan, cook the diced chicken over medium heat until golden and cooked through, seasoning with salt and pepper.
  2. Add mixed vegetables and stir-fry until tender.
Assembly
  1. In bowls, layer cooked rice, chicken, and veggies, then drizzle with the Bang Bang sauce.
  2. Garnish with green onions and serve hot.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the microwave until warm. This recipe is great for meal prep.
