Ingredients
  

For the Bang Bang Sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 tablespoon soy sauce use gluten-free soy sauce for a gluten-free option
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Main Ingredients
  • 2 pieces chicken breasts, diced
  • 1 cup cooked rice can use brown rice or quinoa for a healthier option
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli) can swap for other vegetables such as snap peas or zucchini
  • Fresh green onions for garnish

Method
 

Preparation
  1. In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, soy sauce, garlic powder, salt, and pepper to create the Bang Bang sauce.
Cooking
  1. In a skillet, cook the diced chicken over medium heat until fully cooked and no longer pink.
  2. Add the mixed vegetables to the skillet and stir-fry for about 5 minutes until tender.
  3. Combine the cooked chicken and vegetables with the Bang Bang sauce, stirring to coat evenly.
Serving
  1. Serve the chicken and vegetables over a bed of cooked rice.
  2. Garnish with chopped green onions and enjoy!

Notes

If you have leftovers, store them in an airtight container in the fridge for about 2-3 days. To reheat, microwave until warm. For extra flavor, marinate the chicken in the Bang Bang sauce for 30 minutes before cooking. You can also store the sauce separately to keep it creamy.
