Preparation
- Cook the rice according to package instructions.
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
Cooking the Chicken
- Season chicken with salt and pepper and cook in a pan over medium heat until fully cooked and golden brown, about 5-7 minutes per side.
- Remove the chicken from the pan and slice it.
Assembly
- In serving bowls, layer the cooked rice, mixed vegetables, sliced chicken, and drizzle with the Bang Bang sauce.
- Garnish with chopped green onions and serve warm.
Notes
Leftovers can be stored in an airtight container in the refrigerator for about 3 days. Reheat in the microwave before serving, keeping in mind that vegetables may soften.
