Ingredients
  

For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust for spice preference.
Main Ingredients
  • 1 lb chicken breast Season with salt and pepper.
  • 1 cup rice Cook according to package instructions.
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli) Can use fresh or frozen.
  • 2 tablespoons green onions For garnish.

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
Cooking the Chicken
  1. Season chicken with salt and pepper and cook in a pan over medium heat until fully cooked and golden brown, about 5-7 minutes per side.
  2. Remove the chicken from the pan and slice it.
Assembly
  1. In serving bowls, layer the cooked rice, mixed vegetables, sliced chicken, and drizzle with the Bang Bang sauce.
  2. Garnish with chopped green onions and serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for about 3 days. Reheat in the microwave before serving, keeping in mind that vegetables may soften.
