Ingredients
  

Main Ingredients
  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower) You can choose any type of rice you prefer.
  • 1 cup mixed veggies (broccoli, bell peppers, carrots) Feel free to use any of your favorite vegetables.
  • 2 tablespoons olive oil For sautéing the chicken.
  • Salt and pepper to taste Salt and pepper
For the Sauce
  • 1/2 cup mayonnaise Or you can substitute with Greek yogurt or vegan mayo.
  • 2 tablespoons sriracha Adjust according to your spice preference.
  • 1 tablespoon honey For sweetness.
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Method
 

Preparation
  1. Cook your rice according to the package instructions and set aside.
  2. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat.
Cooking
  1. Add the chicken pieces to the skillet and sauté until golden brown and cooked through, about 6-8 minutes.
  2. While cooking the chicken, mix together the sauce ingredients in a small bowl.
  3. Once chicken is cooked, add the mixed veggies and cook for an additional 2-3 minutes.
  4. Remove from heat, pour sauce over chicken and veggies, stirring to coat evenly.
Serving
  1. Serve the Bang Bang Chicken Bowl over rice and garnish with extra sriracha or chopped green onions.

Notes

Make sure to cut your chicken and veggies into similar sizes for even cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
