  • 4 pieces eggs
  • 200 g feta cheese Crumble over the vegetables
  • 1 cup cherry tomatoes Halved or whole as per preference
  • 2 cups fresh spinach Fresh spinach is recommended
  • 2 tablespoons olive oil Drizzle over the mixture
  • Salt and pepper to taste
  • Fresh herbs for garnish Optional

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine cherry tomatoes and spinach.
  3. Crumble feta cheese over the top and drizzle with olive oil.
  4. Make small wells in the mixture and crack an egg into each well.
  5. Season with salt and pepper.
Cooking
  1. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set to your liking.
  2. Garnish with fresh herbs if desired, and serve warm.

Notes

Serve with crusty bread or toast for scooping, and a fresh salad as a side. For a spicier kick, add red pepper flakes. You can substitute other vegetables or cheeses as preferred.
