  • 2 large large eggs
  • 100 g feta cheese
  • 1 cup cherry tomatoes
  • 1 cup fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste Adjust according to preference.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, add cherry tomatoes and sprinkle with olive oil, salt, and pepper.
  3. Crumble feta cheese over the tomatoes.
  4. Make two small wells in the mixture and crack an egg into each well.
  5. Add fresh spinach around the eggs.
Baking
  1. Bake in the preheated oven for about 15-20 minutes, until the eggs are set to your liking.
  2. Garnish with fresh herbs if desired and serve immediately.

Notes

Serve warm with crusty bread for dipping or alongside a light salad. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave or oven.
