  • 4 large large eggs
  • 200 g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, add cherry tomatoes and drizzle with olive oil, then place feta cheese in the center.
  3. Spread spinach around the feta and tomatoes.
Baking
  1. Bake for 20 minutes or until the tomatoes burst and the feta is golden.
  2. Crack the eggs on top of the baked mixture, season with salt and pepper, and bake for an additional 10-12 minutes, or until the eggs are cooked to your liking.
Serving
  1. Garnish with fresh basil before serving and enjoy warm.

Notes

Serve this dish warm straight from the oven. It can be enjoyed on its own, with toasted bread or pita for dipping, or a side salad for extra freshness. Adjust the amount of vegetables based on preference.
