  • 1 block Feta cheese Use high-quality feta for best flavor.
  • 4 large Eggs
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes Halved.
  • 2 cups Spinach Fresh.
  • to taste Salt
  • to taste Pepper
For Serving
  • 1 loaf Crusty bread For dipping.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, place a block of feta cheese in the center.
  3. Surround the feta with halved cherry tomatoes and a handful of fresh spinach.
  4. Drizzle olive oil over the feta and vegetables, and season with salt and pepper.
  5. Gently crack some eggs around the feta.
Baking
  1. Bake in the oven for about 15-20 minutes, or until the eggs are set and the feta is golden.
Serving
  1. Serve warm with crusty bread for dipping.

Notes

This dish is perfect for sharing. You can sprinkle some fresh herbs on top for added flavor. For storage, let cool completely, then store in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F (175°C).
