  • 1 whole ripe avocado Use a ripe avocado for the best flavor.
  • 2 large eggs Cook to your liking (boiled, poached, or fried).
  • 2 tablespoons pesto Use your favorite type of pesto.
  • to taste Salt and pepper
  • optional Olive oil Drizzle if desired.

Method
 

Preparation
  1. Toast the slices of bread until golden brown.
  2. While the bread is toasting, cook the eggs to your liking (boiled, poached, or fried).
  3. Mash the avocado in a bowl and season with salt and pepper.
  4. Spread pesto on the toasted bread.
  5. Top with the mashed avocado and place the cooked eggs on top.
  6. Drizzle with a little olive oil if desired and enjoy!

Notes
