- Toast the slices of bread until golden brown.
- While the bread is toasting, cook the eggs to your liking (boiled, poached, or fried).
- Mash the avocado in a bowl and season with salt and pepper.
- Spread pesto on the toasted bread.
- Top with the mashed avocado and place the cooked eggs on top.
- Drizzle with a little olive oil if desired and enjoy!
Notes
Avocado Egg Pesto Toast is best served fresh. It pairs wonderfully with a side of fruit or a light salad. Store leftover ingredients separately to maintain freshness.
