Ingredients
  

For the Spring Rolls
  • 10 pieces Spring roll wrappers
  • 1 cup Shredded cabbage
  • 1 cup Shredded carrots
  • 1 cup Sliced mushrooms
  • 2 tablespoons Soy sauce For flavoring the filling
  • 1 can Sweet and sour sauce For tossing the chicken
  • 1 tablespoon Cooking oil spray For air frying
For the Sweet and Sour Chicken
  • 1 pound Chicken breasts Cut into bite-sized pieces
  • 1/2 cup Cornstarch For coating the chicken
  • 2 large Eggs Beaten for dipping
  • 2 green onions Sliced For garnishing

Method
 

Preparation of Spring Rolls
  1. In a bowl, mix together shredded cabbage, carrots, and mushrooms. Add soy sauce and mix well.
  2. Take a spring roll wrapper, place a spoonful of the mixture in the center, and roll tightly, sealing the edges with a bit of water.
Cooking Spring Rolls
  1. Spray the air fryer basket with cooking oil and place the spring rolls inside.
  2. Air fry at 375°F for about 10-12 minutes or until golden brown.
Preparation of Sweet and Sour Chicken
  1. Cut chicken into bite-sized pieces, coat with cornstarch, and dip in beaten egg.
Cooking Sweet and Sour Chicken
  1. Spray the air fryer basket with cooking oil, add the chicken and cook at 400°F for about 10-15 minutes, shaking halfway through.
  2. Toss cooked chicken in sweet and sour sauce and serve with green onions.

Notes

Make sure to tightly seal the spring rolls to prevent them from opening while cooking. You can adjust the filling based on preference. For extra crunch, give the air fryer a light spray of oil before cooking.
