  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • a pinch salt (optional)
  • 1 cup + 2 tablespoons cottage cheese (2% or 4%)
  • 1 egg (optional) for egg wash
Toppings
  • everything seasoning
  • poppy seeds
  • sesame seeds

Method
 

Preparation
  1. In a medium bowl, combine the all-purpose flour and baking powder. If desired, add a pinch of salt for extra flavor.
  2. Make a well in the center of the flour mixture and add the cottage cheese. Mix the dough until it begins to form a chunky texture using a fork or small rubber spatula.
  3. Turn the dough onto a well-floured surface and knead it for 1-2 minutes until it forms a semi-smooth ball. Add more flour if the dough is sticky.
  4. Divide the dough into 4 equal sections. Roll each section into a 6-7 inch log that is about 3/4 inch thick, connecting the ends to form bagels.
  5. In a small bowl, whisk the egg with a splash of water or milk, then brush it lightly on each bagel. Add toppings as desired.
Cooking
  1. Preheat the air fryer to 300°F (150°C). Spray or line the basket with cooking spray or parchment paper.
  2. Place the bagels in a single layer in the air fryer basket (cook in batches if necessary) and cook for 15-17 minutes until golden brown, checking around 10 minutes.
  3. Once cooked, let the bagels cool for at least 15 minutes before slicing and serving.

Notes

Store prepared bagels in an airtight container at room temperature for up to 3 days or freeze for up to a month. Reheat in the toaster when serving. Consider adding vital wheat gluten for a chewier texture.
