  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Set up a breading station: in one bowl, season flour with garlic powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, combine shredded coconut and panko breadcrumbs.
  3. Dip each shrimp into the flour mixture, then into the eggs, and finally coat with the coconut and panko mixture.
Cooking
  1. Place the breaded shrimp in the air fryer basket in a single layer. Spray lightly with cooking spray.
  2. Cook in the air fryer for about 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serving
  1. Serve immediately with your favorite dipping sauce.

Notes

To store leftover Air Fryer Coconut Shrimp, place it in an airtight container and keep it in the refrigerator for about 2-3 days. Reheat in the air fryer or oven to restore crispiness.
