- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add chicken breasts to the skillet and cook for 5 minutes on each side until they are lightly browned.
- Add the sliced mushrooms and fresh spinach to the skillet. Sauté for about 3 minutes until the spinach wilts and the mushrooms are tender.
- Transfer everything from the skillet to a baking dish and sprinkle the shredded mozzarella cheese over the top.
- Bake in the preheated oven for 15 minutes, or until the cheese is melted and golden.
Notes
For added flavor, marinate the chicken in your favorite herbs or spices before cooking. If you want more vegetables, consider adding bell peppers or zucchini to the mix. You can use pre-cooked rotisserie chicken to save time on prep. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
